The only downside of cauliflower rice is that you have to drag out the food processor and take the time to break down the veggie. Luckily, Trader Joe’s has a new product that eliminates that step. Convenient? Absolutely. Delicious? Of course! Trader Joe’s new Riced Cauliflower Stir Fry is the latest addition to their freezer line-up. The cauliflower rice is seasoned with tamari (gluten-free soy sauce) and sesame oil, then mixed with green peas, red bell peppers, grilled corn, and spring onions. The result is a flavorful, umami-rich dish that tastes homemade and bursts with color. Each 1-cup serving contains just 50 calories, two grams of fat, and seven grams of carbs. Needless to say, it is a much healthier option than take-out. To prepare the rice, you’ll heat olive oil in a large skillet, add the stir-fry, and cook until warmed through, about six minutes. If you’re serving it as an entrée, top with protein, such as a fried egg and sliced avocado, tofu, chicken, or shrimp. Or, leave it as-is and serve as a side. The rice is available in a 16-oz. bag for $3. Prefer to make your own? You’ve still come to the right place.
